The celebration next Thursday for a day in which experts discuss celiac disease will be the forum to submit a monitoring report for the detection of gluten in foods.
Under the title “Analytical methods for detection of gluten in foods”, this work carried out by the Circle of Innovation in Biotechnology (CIBT) Madri + d System in collaboration wit the Association of celiac Madrid presented exploiting further the celebration of National Day of celiac patients.
This study reviews the main analytical techniques for the detection of gluten to foods. It includes both those that are available on the market today, such as those that are still under development. In addition, the report shows the most important legislative issues in this area, such as procedures for approval of a method for detection of gluten by the Codex Alimentarius and regulations concerning the labeling of food products that may contain allergens.
Work also brings together a catalog of groups and projects of national and international research in this most important area, in addition to the patents and companies that offer services based on detection of some of the techniques described in this study.
